Potatoes for salad must be boiled in their skins. This can be done in advance. Peel potatoes, cut into slices. Cut the onion into rings.
Fry the bacon lightly in a dry pan, then add half the onion. Cook together for about three minutes, cool slightly.
Chop cucumbers, sausage, chop finely chopped parsley. Mix the ingredients for the dressing. In a bowl we combine all the components of the salad, pour over the dressing. Bon Appetit!
